About fifty kilometres north of Delhi, on the stretch of National Highway 44 that follows the old Grand Trunk Road, sits the small town of Murthal. For decades its roadside dhabas have been a fixed halt for truckers and families driving to and from Punjab — and the reason everyone pulls over is the paratha.
Thick, tawa-crisped and stuffed with spiced potato, cauliflower, radish or paneer, served with dahi and pickle on the side. Many of those dhabas never close, so a paratha at three in the morning is as ordinary there as one at breakfast.
Our paratha menu is a tribute to that tradition. We are a kitchen in Little Elm, Texas, not a dhaba in Murthal — but every paratha is rolled and stuffed to order the same way.
